Product Description

Saba is food condiment made for centuries by vinegar makers. It is concocted by their fantasy and whim using ingredients at hand.  Saba is also called in other Italian regions Vin Cotto (literally cooked wine). Every family’s recipe is different. Cavedoni’s reaches back to his wife’s ancestors. It starts out like balsamic with the must of the grapes, but it is made quickly so that it can be enjoyed without years of aging. The must is careful cooked for many hours. Near the end, very ripe quince fruit is added and cooked more until it reduces. The result is a dense, sweet, complex syrup, then it is aromatized with spices of cinnamon and cloves.

This Saba is delicious on so many things, but the clear winner is the secret ingredient in Tuscan or Roman style chopped chicken livers. Your crostini will never be the same again.
