Sun-drying comes from a centuries-old tradition invented as a method of preservation. Made from just select tomatoes, sun and salt this process produces tomatoes with intense red color, an elongated shape and crunchy soft pulp that provide a unique tasting experience.
Fiordelisi is undoubtedly one of the best producers of sun-dried tomatoes. Certainly when it comes to quality. Located in sun-drenched norther Puglia where the rich soil produces the best tomatoes in Italy (almost all the high quality Italian canned pealed plumb tomatoes are grown in this area). Fiordelisi controls the entire process from seed selection, cultivation and harvesting, and processing, all on their own estate.

These are absolutely the best tasting sun dried tomatoes we have ever found. They are extremely plump, not leathery, with a sweet taste concentrated with pure tomato flavor. Use then as is with your antipasto, put them in pasta with mushrooms, and of course, they are delicious on pizza.
