We have worked with several caseficio in the Naples area, and we are really impressed with Nuova Casearia. They are located west of Caserta on the great plain known for grazing buffalo, and they are making mozzarella of exquisite quality.
Our mozzarella arrives every Monday, having been made just on Friday, on pre-orders for our restaurants and specialty food retailers. We always order a few extra cases to have some available for you, our website customers. There is very limited supply each week, so get you orders in ahead of time.
The mozzarella is packaged with two 125 gram (4.4 oz.) balls, total 8.8 oz, in a plastic sealed bag filled with the brine that the cheese is cured in. Each ball is a perfect serving for one person.
We package it with plenty of cold packs to keep it fresh and we only let it travel a maximum of two days. Our automated shipping manager will select a ground method if the travel time is within two days, or else it will be assigned an air transport option. We are sorry, but like all our perishables, they are not included in the $100 free shipping offer. |

This is the real mozzarella, better than any other you've ever tasted. I've eaten caprese for lunch every day since it arrived.
Years ago I stayed in an Italian farmstead that made mozzarella every morning from the milk of their water buffaloes. Just like this.
