This olio nuovo was crushed and bottled in October 2016 and
air shipped in the first week of November.
It embodies all character we hope for in new oil: intense fresh fruit taste, a bit sassy and an intense green color. This olio nuovo is bottled immediately as it is crushed, completely unfiltered.
The oil packaged in the 5 liter tin is exactly the same as that in the .75 liter bottle. The maker, Guido Vestri, calls the bottle Siloro, after his daughter Silvia, and the five liter tin Fiordolio after his wife Fiorella.
The olive oil of Olivestri are among the finest in the world. They are produced with extreme care, insuring that all olives are crushed within hours of being picked. They are a blend of olive varietals typical of the region: Leccino, Frantoio, Moraiolo, and Dolce Agogia. The frantoio (olive mill) is in the Umbria town of Petrignano del Lago near the shores of lake Trasimeno, very near the Tuscan border and the towns of Cortona and Montepulciano. Here the Colli del Trasimeno (hills of Trasimeno) are soft and rolling creating a microclimate that imparts a gentle, creamy texture to the oil. Even though the nuovo has quite a peppery finish, it is still void in bitterness, making it suitable for a wide breadth applications.
In order to enjoy its freshness, we recommend using it while it is still young. As it ages, it will still be great olive oil, but the exuberance of its youth will be ever more delicious on vegetables, grilled meats and drizzled over soups.

I really love this oil. The pepper flavor that I enjoy so much is very noticeable. I'm a very happy customer and will continue to buy this oil year after year.

Every year when the tins of new oil arrive we enjoy burcetta with the spicy green oil. We use it for salads and cooking all year and by summer it is a light pale yellow and more mellow. Each harvest is a bit different, this one seems a bit more mild; they have all been good.

I am always on the look-out for good olive oil, which I have found hard to come by in the US. I think it should taste like olives, and this really does. It is a bit peppery (which I like), but not too much and is not at all bitter. This product is actually not expensive for very good olive oil if you buy a 5-liter tin. Then, each liter ends up costing about $26. I have often paid $20 for half a liter of boutique olive oil and this is better oil. I was concerned about shelf-life as olio nuovo has a shorter life than filtered oil. I was pleased to see that the use-by date on the tin was 12/14; I hope this is accurate. I plan to keep it in a cool place and fill used red-wine bottles (dark glass) for a smaller container. I am pleased and hopeful that it will last until I use it up which will probably be 1.5 years (though I might give some to family as Christmas presents). We eat a lot of salads and I cook with olive oil often.
