Capocollo (Coppo)
A Tuscan Treasure

Coppa is a traditional pork salume made from the muscle running from the pig's head ("Coppo") to the fourth or fifth vertebrae in the neck ("Collo").  It is a whole-muscle salume, dry cured and made using one of the most prized part of the pig.  Capocollo is lightly marbled with fat and salted on wooden boards. It is then rinsed and seasoned with wild-fennel seeds and flowers, giving it the name of “finocchiata” in the Tuscan region where Filippo makes his salumi. The meat is then aged to give it its unique tenderness and taste.


 Note on shipping Perishable products like this cured meat: We ship this in insulated thermal bags with large frozen cold packs. Your product should arrive at refrigerator temperature. Put them in your refrigerator immediately upon receipt.  We ship perishables only via a maximum of two-day transit only Monday-Wednesday. Based on your ship-to zip code you will be offered different shipping methods that take a max. of 2 days. Orders placed after 12 PM Pacific time on Wednesday will be shipped the following Monday. Perishable orders are not included in the $100 minimum Free Shipping promotion. If you want to order other goods, place the perishables on a separate order so that the other goods get free shipping.
