For over 120 years, the Gambassis have continued their family tradition of producing homemade cured products based on the oldest Tuscan recipes handed down from father to son in their historic town of San Gimignano.

 

They create the ancient flavors of the past, preserved over time thanks to the homemade work of the salumieri (the guys who makes the salumi). Very strict quality control makes the perfect relationship between the flavors of the past and the knowledge of today. 

 

Since he was a child, Filippo, the fifth generation Gambassi, learned from his father Giulio the secrets of this art. Still now he works to keep this knowledge intact with full respect and dedication to preserve the family’s artisan tradition using the same methods of curing meats.

 

felippo.pngFilippo was frequently asked by Americans who came into his Italian shops, "How can we get your wonderful products in the United States?" The FDA and Department of Agriculture rules would not allow the export of his salumi to the USA, so he decided to produce his Tuscan cured meats in the U.S. with the true perfume and taste of this family’s heritage.  Now, Felippo splits his time between his salumerie in Tuscan and Virginia where he is making the same great salumi with his family’s recipes and techniques, but with domestic Berkshire pigs.

 

In the late 19th Century, Felippo’s great-grandfather, Lorenzo Nidiaci, was well known all across central Italy for being the personal butcher of the Royal Family. Today, Filippo Gambassi is the ambassador of this family tradition to the United States.

 

We are fortunate to represent Filippo’s beautiful cured salumi made the original way based only on simple organic ingredients and slow natural aging.
