We are very proud that all of our balsamic vinegars come from Antca Acetaia Cavedoni. The Cavedoni family established their artisanal acetaia (a vinegar producing facillity) five generations ago in 1860 just south of Modena, Italy, making it one of the oldest in the world.  Palo Cavedoni, along with his son Marcello, continues his family's tradition making their exquisite vinegars completely in the old method, aging it in old barrels of different types of precious woods, including oak, chestnut, cherry and juniper. Most importantly, all Cavedoni products are completely natural, with no adulteration from additives such as caramel or sugar. The resulting complex taste is natural with a perfect balance of sweetness and acid and varying viscosity. 100% of Cavedoni's balsamics are made from must obtained from his own vineyards of Trebbiano and Lambrusco grapes. Cavedoni makes a variety of vinegars for different applications and budgets, including a precious and rare DOP Tradizionale and Tradizionale Extravecchio, IGP Balsamics of Modena and a variety of items classified simply as condimenti, or condiments.

 

 

Cavedoni is located in the beautiful town of Castelvetro

on the Guerro River south of Modena.
