This ancient condiment is made by layering anchovies and salt in barrels for many months, then poking a hole in the bottom to let the delicate amber juice seep out. 

 Thought by many as the Italian "umami", this secret ingredient contains the subtle essence of the sea. 

 Colatura can be used in any recipe that calls for dissolved anchovies. You can drizzle it over ripe tomatoes, deviled eggs and is a spectacular addition to vinaigrettes.

 This products is not to be confused with Garum, which is made from fermented fish and is not nearly as subtle.
