Italian Fresh Cheese
Our Italian Fresh Cheese Program is focused on the beautiful cheese made in Campania and Puglia, the southern Italian regions with Campania centered by Naples and Puglia being the toe of the boot. There are two big stars from here: Mozzarella di Bufala and Burrata. Traditionally, Mozzarella is made from the milk of water buffalo and is made in Campania and while Burrata is made from cows milk in Puglia.
The secret to supplying this lusciously delicious cheese is to solve the logistics to get it here within a few days of it being made. Mozzarella di bufala and Burrata, require being enjoyed when they are fresh, fresh. Our logistics agent outside Naples coordinates everything for us. They work directly with the caseificio (cheese factory) to have our order manufactured every other Friday. It is shipped in an insulated container to Rome where it catches a flight to arrive at SFO on Sunday. We have it in our warehouse on Monday and make deliveries immediately to our restaurant & specialty food store customers. Three-day old Mozzarella or Burrata!
We always order a little more so that we have it available for our website customers for you to enjoy. We ship it in insulated containers with cold packs not to exceed two days of shipping. |
