The recipe makes 1/2 cup of the mortadella mousse.
You will get enough of the prime ingredients to make two batches,
and you will have plenty of the Parmigiano-Reggiano and the balsamic left to use in other recipes. The recipe doesn't
call for the balsamic but if you don't use the fresh truffles, drizzling it on the finished crostini will be wonderful.

Mortadella

3/4 lb of authentic I.G.P. Bologna from Golfera

This extremely prestigious mortadella is made to a traditional recipe using only the finest pork shoulder, tied by hand and cooked in a brick oven. The fragrance is intense and slightly aromatic, but delicate, full‐bodied and well balanced. When sliced it is smooth, compact and velvety, with a bright pink color and evenly distributed lardo (cubes of fat) from the pig’s neck.

Pistachios

 200 gr (7 oz) bag of organic authentic Sicilian pistachios from Gangi Dante

Sicilian pistachios can be immediately recognized by their vibrant green and purple color. They are both sweet and savory with earthy flavors. Because they are dry farmed, they retain more oil than standard pistachios which gives them flavor way beyond other pistachios.

Parmigiano-Reggiano Cheese

2 lb chunk authentic D.O.P. Parmigiano-Reggiano from Latteria Soresina

These chunks are cut from whole aged wheels in the Soresina plant in Italy where they are shrink-wrapped and labeled.  The recipe calls for grated Parmigiano. We have chosen to give you the whole piece of cheese for you to grate à la minute to retain ultimate flavor.

 Ricotta Cheese

250 gr container of Ricotta di Bufala (buffalo milk ricotta cheese) from Campania Felix

We have chosen to up the ante and include genuine buffalo milk ricotta cheese.  So creamy and delicious. We fly in our fresh cheese (mozzarella, burrata, stracciatella, ricotta) from Southern Italy every two weeks. This is a real treat and will make this dish zing.

Balsamic Vinegar

 250 ml (8.8 0z) bottle of Botte Piccola authentic Aceto Balsamico di Modena from Cavedoni

This balsamic is aged seven years and is the perfect balance between sweetness and acidity. Cavedoni is a 6th generation artisanal producer who grows all his own grapes from which he makes this vinegar.
