500 gr (1.1 lb) Small Sized (Occhio di Pernice) Capers in salt from the Island of Pantelleria from Kazzen Pantelleria is part of Sicily but it's way out in the Mediterranean much closer to Tunisia than Italy. It is known all over the world for the high quality of its capers that grow on the rocky soil of the windswept island. These are the absolute best capers you can find. |
Black Olives |
190 gr (6.7 oz) Peranzana Olives from Petruzzelli We have chosen to pair the Peranzana olive with this dish. From the warm lands of northern Puglia, these olives have low acidity, a complex earthy taste and slightly bitter finish. Perfect for the hearty swordfish. |
Italian Tomatoes |
Two 500 gr (14 oz) Marzanino Pomodorino from Antico Casale Franzese The Marzanino tomato is the cousin of the San Marzano, grown in the same Southern Italian territory. What distinguishes these is the exceptionally sweet taste with minimal acidic aftertaste. They are a small plum-sized elongated tomato, and a deep red color, similar to the Piennolo, but these are peeled to avoid the tough skin. |
Extra Virgin Olive Oil |
