A native Roman raised in the Umbrian countryside, Viola grew up with these artisanal foods, learning about how they developed from centuries-old traditions. Now a San Francisco-based cooking instructor and author, Viola’s passion is sharing the beloved flavors of her homeland with home cooks. Her new book is her ultimate contribution to that passion.
