“00” Flour for Making Fresh Pasta
This is the most respected of Molino Pasini's flours. It is the choice of Michelin stared chefs all over the world for making fresh pasta. It is soft and delicate to the touch and makes fresh pasta that allows for short mixing times and maintains its natural yellow coloring for many days without turning grey (oxidizing). The pasta develops coarse, and, therefore, retains sauce better and withstands cooking and double cooking. It also mixes very well with semolina. This flour has been formulated to retain moisture to avoid breaking, especially when filled.
It is truly as in the name – Pasta D’Oro – Golden Flour.
