Melotti Rice
Melotti is a family run agricultural business producing rice only from their own land which they care for meticulously. They are located in Isloa della Scala, know as the City of Rice, which has been producing rice for centuries in lowlands below Verona. Their production is completely natural with no chemical intervention. The rice from this region is especially well known for Vialone Nano Veronese production, and Melotti’s carries the prestigious IGT designation. Vialone Nano is a semifino rice because it is short and stubby. (Nano means dwarf in Italian). It produces a super creamy risotto all’onda (with a wave), meaning quite loose and is the favored risotto in the Veneto. Melotti also produces superb Riso Carnaroli, which is designated superfine, and is considered by many the ultimate risotto rice. It is favored by chefs from Milan and all of Piedmonte. It has maximum starch to produce a stiffer risotto.
